Gas Up the Stove

Quick and Easy Salsa Chicken

 

1 small onion, diced

1/2 medium green pepper, diced

1 clove garlic, pressed or diced

2 tbsp. olive oil

1 16-ounce can beans of your choice (black, pinto, kidney or white), rinsed and drained

1 rotisserie baked chicken (from your grocer) or leftover chicken

1 24-ounce jar salsa

 

Remove the skin and de-bone the chicken, then cut meat into bite-sized chunks. In a large skillet, sauté the onion and green pepper in olive oil then add the garlic. Add beans and salsa, stir and bring to a slow simmer. Add chicken and simmer until the chicken is heated. Serve four to six people. Serve alone or over rice, or with tortilla chips and avocado slices.
