Gas Up the Stove

Scrumptious Carrot Cake

1 ½ cups flour                    

1 tablespoon vanilla extract

1 teaspoon baking powder                 

1 cup vegetable oil

1 teaspoon baking soda             

1 small can crushed pineapple

1 teaspoon ground cinnamon                

2 eggs

½ teaspoon salt                   

2 cups shredded carrots (3 to 4 medium carrots)

1 cup sugar                       

 

Preheat oven to 350 degrees. Using an electric mixer set at low speed, mix all the ingredients together. Pour cake batter into 9 x 13-inch baking dish and bake for 30 minutes or until toothpick comes out clean. Let cake cool before frosting.

 

Cream Cheese Frosting:

1 cup confectionary sugar               

4 ounces butter (softened)

1 teaspoon vanilla extract               

8 ounces Neufchatel cheese (softened)

2 tablespoons milk or cream

 

Blend all ingredients using an electric mixer.
