Gas Up the Stove

Rich & Moist White Chocolate Cheese Pound Cake

2 cups all purpose flour

1 box white chocolate instant pudding

2 cups butter, softened

3 cups sugar

6 large eggs

1/3 of a 14-ounce can of condensed milk (about 5 ounces)

1 8-ounce package cream cheese, softened

1 tablespoon vanilla extract

Preheat oven to 325 degrees.  Heavily grease and flour a 10” Tube pan.

Sift together flour and pudding mix in bowl and set aside.

In a large bowl, beat butter with mixer for 3 minutes.  Add sugar and beat for 4 minutes.  Add eggs one at a time.  Add condensed milk.  Add flour mixture and beat until smooth.  Add cream cheese and vanilla and beat until combined (don’t over beat the mix!).  Bake 1 hour and 45 minutes or until wooden pick inserted comes out clean.  Cool almost completely in pan, turn onto cooling rack, & cool completely.

This is great for serving alone – or with fresh fruit, like strawberries, in their juice. Also good if served with a lemon curd or tart fruit sauce (blackberry or raspberry).
